Kadambuttu ( coorgi style rice dumplings)


Kadambuttu is a signature dish of kodavas/coorgis.This dish is normally prepared along with coorgi chicken curry or pandi (pork ) curry .You can have it with any other curries as it is prepared with simple rice-rava or idli rava/Rice semolina.Usually kodava's prepare this right from the scratch.But in this recipe i have used readily available rice rava which is as good as home made rava.

Ingredients:
Idli rava / rice rava - 2cups
Water-6 cups
Salt to taste
Sugar-1/2tsp
Cardamom -1 crushed

Method:


  • Wash and soak rava with 6 cups of water for 30 mins.
  • Now take a deep kadai or heavy bottom pan and cook the rava along with water on low flame.
  • Add salt,sugar and crushed cardamom and keep stirring all the time to avoid any lumps.
  •  Continue to stir till the mixture is fully dry and resembles soft dough, immediately  turn off the gas and cover it for few mins with a lid.
  • Now take a bowl of water and mix in a tsp of oil.
  • Dip the fingers into the water and rub onto both the palms.
  • Now take about a heaped table spoon of this rice dough and roll into nice round balls.
  • Now heat idli cooker or steamer and place all the balls inside the steamer and steam like idli for about 30 mins.
  • Serve hot with coorgi pandi curry or any other curries of your choice.

Chakke kuru Pajji/jackfruit seed chutney


This chutney is prepared with jackfruit seed .This is a coorgi dish called Chakkey kuru pajji(jackfruit seed chutney) which is quite famous in coorg specially in jackfruit season.There they relish this with Rice rotti/otti or Kodumbuttu( rice dumplings).
  Jackfruit is a unique,exotic fruit from which we can prepared so many dishes whether its raw or ripe.we can use almost all parts of jackfruit tree.In jackfruit the seeds are also important as edibles.We konkanis prepare so many dishes with this goes well with any dish.You can prepare so many dishes with this.Jackfruit seeds are relatively big compared to other fruit seeds.It can easily substitute for potato.

Ingredients:
Jackfruit seed-10
Green chillies-3-4
Fresh grated coconut-1cup
Lemon juice-2tsp
Salt to taste
Garlic-7-8 cloves for seasoning

Method:

  • First cook the seeds with salt till soft in a pressure cooker.Take about 2-3 whistle.
  • Once it is cool down remove the outer white coloured peel and mash it well.
  • Now grind it along with coconut and green chillies to fine paste.
  • Mix it lemon juice and salt to taste.
  • Now take a small pan add a table spoon of oil and add some crushed garlic and fry till golden brown.Add this to the ground paste and serve with roti or rice.

Coorgi pandi (pork)curry

pork curry and Kadambuttu ( coorgi style rice dumplings)

This is my second coorgi dish .My first dish was chicken curry and this is with pork.coorgi people love pork they call it pandi. They serve this dish in almost every occations along with akki rotti/otti orKadambuttu ( coorgi style rice dumplings) which is prepared using rice semolina/rava goes well with this pandi curry. I tried this combo for the 1st time and believe me it was simply awesome.
    In this recipe i have used Yorkshire pork which is very tender and just melts in your mouth and with this i prepared Kadambuttu ( coorgi style rice dumplings)(steamed rice dumplings) which is very easy it is like our  rice Oondi.Only thing that i did not use in this is coorgi vinegar(kachampuli).Actually i have no idea where it is available so i replaced it with tamarind pulp and little malt vinegar.The dish was superb and we all loved this dish.

Ingredients:-

  1.  Pork-1kg
  2. Chilly powder-1tsp
  3. Vinegar-2tsp
  4. Turmeric powder-1tsp
  5. Salt to taste.
  6. Pepper corn-1/2tsp
  7. Coriander-1tbsp
  8. Cumin-11/2tsp
  9. Cloves-10
  10. Coriander leaves-1cup(chopped)
  11. Green chilly-4
  12. Ginger-1"piece
  13. Garlic-1pod
  14. Onion-2(chopped)
  15. Tamarind pulp-1tbsp


Pork


  • Wash pork couple of times,remove excess water and keep aside



  • Now marinate the pork with chilly powder,turmeric powder,vinegar and salt to taste.




  • Now  dry roast coriander,cumin,cloves and pepper until dark brown color and make fine powder.





  • Prepare wet masala using onion,coriander leaves,garlic,ginger and green chilly.
Method:-

  • Heat 1tbsp oil in a pressure cooker and add marinated pork and saute on high heat for about 5 mins.
  • Now add the wet masala and a cup of water .Cover the lid and cook for 15 mins or take 2 whistle.
  • Once the cooker cools down open the lid and add dry masala powder nd continue cooking until the dish is almost dry.
  • At this stage add tamarind pulp and boil further 5 mins or till semi dry.If you want to have it as a snack or starter then cook on a high flame until it is  almost dry.
  • Serve hot with coorgi rotti or with kadambuttu
